TUSCALOOSA FOOD TRUCK OPENING A BRICK AND MORTAR EXPANSION

Food truck and catering company Local Roots is now putting down roots in Tuscaloosa.
“A lot of people laugh because I said I would never open a restaurant,” said Local Roots Owner Dustin Spruill.
Spruill lied, because that’s exactly what he’s doing with Local Roots at a free-standing building within the Tuscaloosa Galleria across McFarland Boulevard Indian Hills Country Club.
But he’s not forgetting where he came from, because the food truck will continue popping up around town.
“The food truck will still run, but it will be rebranded as Local Roots Catering,” Spruill said.
With a restaurant-sized kitchen comes a restaurant-sized menu, Spruill said, along with longer hours and even a drive-thru.
Some potential new additions to Local Roots’ standard burgers, fries and salads include beer and wine, flatbreads, a fried chicken sandwich and a children’s menu. But the food truck’s menu varies weekly, so you may also see items like a smoked chicken sandwich with pimento cheese, white barbecue sauce and pickles on toast or a smoked chicken Caesar piadine — that’s a salad inside a folded pizza.
“We want it to be a hangout,” Spruill said. “Just a larger version of us.”
Late spring is the planned opening date, but Spruill said that’s not yet set in stone.
