CTKO TAILGATING TIPS: SOUTHWEST CAVIER

SOUTHWEST CAVIER DIP

2 can black beans rinsed and drained

2 can mexican corn  rinsed and drained

2 cans Rotel tomatoes – well drained

1 small red onion, chopped

1 jalapeño- seeded and finely chopped

2 cloves garlic finely chopped

4 Green onions chopped

¼ c cilantro chopped

2 ripe avocadoes  chopped

Zest of 1 lime (maybe 2 if small)

Mix all these vegetables together

Dressing:

Juice of 1 lime (or use more…just taste)

2-3 tsp honey (taste you may want more)

1/3 cup veg or olive oil

¼ Red wine vinegar

Salt to taste

1 ½ tsp Hot sauce (adjust to your taste)

Fresh cracked pepper

Mix all together . Add the dressing to the veggies. Stir well but tenderly as not to mash the avocado. Cover and let marinate in fridge for at least 1 hour. Serve with tortilla or corn chips or on a hot dog!
