NOT YO’ MAMA’S BOLOGNA & CHEESE SLIDERS

Regular sliced Zeigler bologna, 6-8 slices

Package of slider rolls, 8 count

Smoked Gouda or Provolone cheese, thin deli slices

Dijon or whole grain mustard

Mayonnaise

Vegetable oil

1 large onion thinly sliced

½ stick butter

¼ tsp Onion powder

¼ tsp. Garlic powder

Cut each piece of bologna and cheese to fit the slider bun using a biscuit cutter.  In a pan with a small amount of vegetable oil, fry the bologna.  Sauté the onions with a tablespoon of butter slowly on low heat to caramelize. Cool. Mix mayonnaise and mustard together.

To build the slider, place a piece of bologna and a piece of cheese on each slider bottom bun.  Top with caramelized onion. Then spread the mayonnaise/mustard mixture on the slider bun top. Place top bun on slider and put all sliders on a baking sheet lined with foil or a silpat mat. Melt the remaining butter and mix butter, garlic and onion powder together.  Brush butter mixture on the tops of each slider bun. Bake at 325° for approx. 8-10 minutes. Serves 8.
